5 Delicious Plant Based Salads To Welcome Spring


Happy April my friends!!!  Spring is in the air and you know what that means!  SALADS !!!!  Lots of fresh green SALADS!

With each new season comes a new fresh perspective and loads of inspiration.    I just love seeing all the beautiful colors in the supermarkets this time of year, from the bright greens of asparagus and avocado to the deep reds of strawberries.

Another big change that happens this time of year is transitioning from the heavy winter root foods like potatoes and soups and casseroles to the lighter fare of Spring salads and fresh fruits.

And let’s not forget the ever exciting…. long awaited Farmers Market !!!!

We’ll we’ve compiled a list of 5 that are sure to wet your whistle and get your Spring started!

1. Fresh Vegan Burrito Bowl

What I love the most about this recipe is the substitution of ingredients.  If you don’t have quinoa use rice, use buckwheat.  Beans, if you don’t like black use kidney or pinto instead.  It’s a simple, easy dish that is great for a light spring or summer dinner to shed some of that bulky heavy wintery feeling.

2.  Creamy Chickpea Avocado Bowl

What a powerhouse of a salad!  Wow!  And the dressing is made with avocados and NO oil which is great for those of you who are following a no oil plant based diet.  Love this as a side dish!

3.White Bean Caprese Salad

What a fun and whimsical salad.  If you are choosing to eat a plant based diet, it is very important to get protein everyday and this salad has tons of it with those beautiful white beans.

4.  Asparagus, Tomato and Feta Salad with Balsamic Vinaigrette

For Cooking Classy to say she was worried this salad wouldn’t “wow” us is just silly talk!  Just look at all that freshness and crispness and loads of CRUNCH!  But in the end after she tried it it turned out to be just that!  I’ve made this myself (several times I might add…) and WOW is an understatement.

5.  Springtime Mixed Berry Salad

I don’t think I’ve ever seen a salad that I wanted to actually bathe in before, well ….. until just now.  There is a mix of fresh spring greens, and those berries!  Nothing screams Spring like berries.  But the best part is it isn’t smothered in a store bought dressing.  The balsamic, mustard and oil dressing is a perfect compliment to this salad. If you are following a plant based diet, just omit the cheese.
