Beef and Bean Burrito

I really don’t have any great story to tell about burritos, like reminding me of a recent trip to Mexico or the day a warm breeze was going through my hair as I sat with a Sombrero on my head and a Margarita in hand.

You see, the thing is… my son LOVES any food remotely Mexican related.  I think there’s some Mexican blood in him somewhere.  So as a mom I must fulfill these food related cravings he has so he can tell his friends I am the best mom ever.

Full Disclosure:  We started out in the freezer section and bought the bag of frozen burritos and taquitos (please don’t judge).  If there is anything, ANYTHING to start you on your unprocessed journey, PLEASE let it be any type of frozen entrée.  The ‘meat’ in them is a total mystery.  I’ve done my research on what is actually in those entrees and let me tell you, it isn’t the BEST part of the animal.

So back, to our non story.

I learned how to make refried beans from scratch which makes this recipe super quick!  I freeze a few batches of beans at a time now so when we want something Mexican for dinner, I can just pull them out and they are ready to be stuffed in burritos, like my Sweet Potato and Bean Burritos or just a side dish to your Enchiladas one night. refried beansSo since I already had a batch of refried beans made, I had to figure out a way to incorporate the beef into this concoction we were making up.

All I really did was dice up a little onion, browned it with a lb of ground beef and threw in a little chili powder, cumin, salt and pepper.  I put the ground beef into my food processor and whirled it until it was baby fine.

Then I added it to my beans.  Walaa!  TALK ABOUT FAST!


I put 1/4 cup of the beef and bean mixture in the center of my fajita size tortilla

Beef and Bean Burrito



  • Refried Beans
  • 1 lb local organic ground beef
  • 1/4 cup onion, diced
  • chili powder, cumin, salt and pepper to taste


  1. In a large skillet, over medium/high heat, brown the ground beef, onion and spices until the beef is no longer pink
  2. Drain if necessary
  3. Add to a food processor and whirl until fine
  4. Return to the skillet and incorporate the refried beans
  5. Add a little water if necessary and heat through
  6. Add 1/4 cup of the beef and bean mixture to a fajita size tortilla
  7. Fold in the edges and roll

Easy to freeze and reheat! Put 1 burrito in the microwave for 40 seconds, flip and heat another 30 seconds

  1. Sprouted grain tortillas are healthier with less carbs and sugar than flour tortillas. White flour tortillas are a processed food. No thank you.
