Beef and Bean Burrito



  • Refried Beans
  • 1 lb local organic ground beef
  • 1/4 cup onion, diced
  • chili powder, cumin, salt and pepper to taste


  1. In a large skillet, over medium/high heat, brown the ground beef, onion and spices until the beef is no longer pink
  2. Drain if necessary
  3. Add to a food processor and whirl until fine
  4. Return to the skillet and incorporate the refried beans
  5. Add a little water if necessary and heat through
  6. Add 1/4 cup of the beef and bean mixture to a fajita size tortilla
  7. Fold in the edges and roll

Easy to freeze and reheat! Put 1 burrito in the microwave for 40 seconds, flip and heat another 30 seconds
