In a large bowl (or Kitchen Aid bowl), dissolve the yeast in warm water.
Add the milk, butter, sugar, egg yolk and salt.
Using a dough hook, slowly add flour and beat on medium for 2-3 minutes until the dough forms a ball. It will pull away from the sides of the bowl
Take the dough out of Kitchen Aid and put it on a floured surface and knead until elastic, approx 5 min.
Add small amounts of flour if dough sticks to surface
Place the dough in a greased LARGE bowl, turning once to grease both top and bottom and cover with clean cloth for 1 hour. (TIP: If your house is below 68 degrees try turning the oven on 100 for abou 20 seconds and then turning off. Put the bowl in there and close the door and leave in oven to rise)
Punch the dough down and roll out if you’d like to make it easier to handle and roll into small balls.
Freeze until ready to bake
When ready to bake:
Coat a cast iron skillet with oil and place the dough balls in the pan leaving plenty of room for them to rise!
Cover with a clean cloth and let the dough rise 2-4 hours
Preheat the oven to 350
Put plenty of melted butter on them (and I use caraway, poppy, sesame seeds along with sea salt)
Bake until browned – approx. 15-20 min
Give them another tiny brush of melted butter and watch them be devoured !!!
