FOR THE CHICKEN MARINADE:
- ½ Cup Shallots
- 4 Cloves Garlic
- 1 Adobo Chipotle Pepper in Adobo Sauce
- ½ – 1 Tablespoon Adobo Sauce (from the can)
- 1 Tbsp. Chili Powder
- 1 Tbsp. Chipotle Powder
- 1 Tbsp. Ground Cumin
- 1 teaspoon Dried Oregano
- ½ Tbsp. Sea Salt
- ½ teaspoon Black pepper
- ⅓ Cup Olive Oil
- 2 Chicken Breasts, cut into large cubes
- Cilantro Lime Rice
OPTIONAL TOPPINGS:
- Shredded Lettuce
- Sauteed Onions and Peppers
- Roasted Corn
- Black Beans
- Diced Tomatoes
- Guacamole/Salsa/Pico de Gallo/Sour Cream/Shredded Cheese
Instructions
FOR THE MARINADE:
- Place all the ingredients in a food processor (EXCEPT THE OIL) and pulse until smooth. Drizzle the oil in until combined.
- Cut the chicken into 1″ pieces and place in a bowl. Add the marinade and stir. Refrigerate for at least 3 hours for maximum flavor.
- Begin by heating a large cast iron skillet over medium-high heat until it’s hot. You shouldn’t need to add oil since the marinade already contains it, but a light coating may be necessary to prevent sticking. Place the chicken in the pan without overcrowding. You may need to cook the chicken in batches to achieve the best results. Avoid turning the chicken until the sides have turned white with just a hint of pink in the center. This ensures a perfect char. Cook until the chicken is no longer pink.
- As an alternative method, you can grill the chicken. Simply preheat the grill to medium-high heat and grill the chicken for 5-7 minutes on each side, or until it’s cooked through and boasts a delightful char. Adjust the cooking time as necessary.
- To make the burrito bowl, layer shredded lettuce, rice, chicken, veggies, corn, black beans, salsa, guacamole, sour cream, shredded cheese.
