Grilled Mediterranean Chicken Kebobs



Definition of Kebobsmall pieces of meat or seafood seasoned or marinated
and grilled, often with tomatoes, green peppers, onions, or other vegetables,
usually on a skewer which = FUN !!!

Kebobs are such a fun way to change things up.  They always look so festive and well thought out.  I’m thinking kebobs are going to make many appearances in my backyard this summer, especially these Grilled Mediterranean Chicken Kebobs.

They are bite size pieces of chicken, beef or shrimp and full of color with the different variety of bell peppers, tomatoes, veggies and whatever else you can shove on that skewer.

But before we can eat ’em …. we gotta make ’em.  And here’s how we do it:

First you want to get some spices onto that chicken.  Don’t be afraid to use it all up.  You want that chicken good and coated.


Next you want to chop up some garlic … ok a LOT of garlic.  I can’t remember exactly HOW much this came to, but I want to say a 1/2 cup.  So, yeah … garlic – LOTS OF IT

Combine all those cloves of garlic with the fresh light taste of the lime juice and olive oil


And pour it all over your chicken and onions.  Let that marinade ~ overnight if you can.  It makes a big difference in the flavor.


Then when you can’t stand it anymore and must make the kebobs … like NOW!  Just thread them onto your skewers.  A little piece of chicken … an onion. A little piece of chicken… a pepper.  A little piece of … well you get the idea.


And grill over high heat for 12-15 minutes until the chicken is cooked through and you my friend will be the envy of all.  Look at you with all your chicken kebobbie things.

As most of you know I have become completely obsessed with Mediterranean food these last few years so you KNOW there was hummus and Naan bread along with this meal!



Grilled Mediterranean Chicken Kebobs



  • 3 Skinless Organic Chicken Breasts (you can also use thighs as well) cut into cubes
  • 2 teaspoons paprika (or smoked paprika)
  • 1 teaspoon dried thyme
  • 1 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 yellow onion, sliced
  • 1/2 cup olive oil
  • 6 garlic cloves, minced
  • 3 organic limes, juiced
  • 1 organic green bell pepper, cut into 2” pieces
  • 1 organic red bell, cut into 2“pieces
  • 1 organic red onion, cut into 2” pieces


  1. Cut up the onion into large chunks or rings and place in the bottom of a shallow baking dish
  2. Cut up the chicken into 2″ cubes and place into a mixing bowl
  3. In a small bowl, combine the paprika, thyme, nutmeg, cardamom, salt and pepper and coat the chicken cubes with the spices
  4. Combine the minced garlic, lime juice and oil and pour it over the chicken. Toss it all together making sure it is well coated. Cover and refrigerate for 2-4 hours or overnight.
  5. When ready to grill, thread the chicken, green peppers, red peppers and onion onto skewers. I prefer metal but you can use wood just be sure to soak them first
  6. Turn the grill on high to heat it up
  7. Place the kebobs on the grill and cook for 12-15 min turning occassionally
