Grilled Mediterranean Chicken Kebobs




  1. Cut up the onion into large chunks or rings and place in the bottom of a shallow baking dish
  2. Cut up the chicken into 2″ cubes and place into a mixing bowl
  3. In a small bowl, combine the paprika, thyme, nutmeg, cardamom, salt and pepper and coat the chicken cubes with the spices
  4. Combine the minced garlic, lime juice and oil and pour it over the chicken. Toss it all together making sure it is well coated. Cover and refrigerate for 2-4 hours or overnight.
  5. When ready to grill, thread the chicken, green peppers, red peppers and onion onto skewers. I prefer metal but you can use wood just be sure to soak them first
  6. Turn the grill on high to heat it up
  7. Place the kebobs on the grill and cook for 12-15 min turning occassionally
