How to Cut a Butternut Squash

I just love butternut squash, but until I figured out how to cut it into those nice little cubes, I was a little hesitant to cook it.

But today, I’m going to show you how to cut up a butternut squash without slicing your fingers off and save you a small fortune from buying it precut from the grocery store.

Step 1 – Using a very sharp knife, slice about 1/4″ off the bottom of the squash.

Step 2 – Slice 1/4″ off the other side of the squash.butternutsquash3

 Step 3 – Using a peeler, peel the entire squash pushing away from you.  butternutsquash4

Step 4 – Until it looks like this: butternutsquash5

Step 5 – Next, stand the squash upright and slice right down the middle.

Step 6 – Until it looks like this:

 Step 7 – Then you want to scoop out the seeds using a spoon.  I have to use a sharp steak knife sometimes to get all the stringy part out, but use whatever gives you a clean squash. butternutsquash8

Step 8 – Now that the squash is all cleaned out, turn it over and cut the skinnier part from the bottom part.

 Step 9 – Cut it into strips

Step 10 – and dice into cubes

 Step 11 – until you’re all done!

Now you have no excuse not to make this U-H-M-A-Z-I-N-G Butternut Squash Risotto!

  1. It is easier to cut lengthwise if you cut in half beforehand, insert step 8 ahead of step 5. Going to try the risotto recipe asap. Thanks
