It’s been quite a while since I’ve been THIS excited about a recipe!   This spinach salad is truly THE BOMB!!

Certain foods just belong together like peanut butter and jelly, and that would be spinach and strawberries.   Add to that the combination of cranberry and orange and I’m telling you THIS is one amazing salad!

There is something so refreshing and light about adding fruit to your salad.   I just love strawberries in my salad, don’t you?

I also like mandarin oranges and I didn’t think of putting them in there until just now.  I mean the poppy seed dressing has orange juice and orange zest in it, so why not?

Spring is here and the strawberries are nice and ripe, the baby spinach is crunchy and MY most favorite part has to be the avocado.  It adds such a creaminess to this salad contrasting with the crunch of the spinach and toasted almonds.

So let’s see … there’s a lot going on in this salad.  On the crunchy side there is spinach, toasted almonds, red onion.  On the softer side are the dried cranberries and chicken.  Then on the creamy side is the avocado and feta cheese.  Oh my !!!

I don’t know about you, but the salad isn’t what makes the salad, it’s the dressing right?  I mean let’s be honest here.  This orange poppy seed dressing is absolutely delicious.  It’s just oil, orange juice and zest, honey, Dijon mustard and poppy seeds.  There is just enough sweetness with the honey added, but NO refined sugars or additives.

And we like that!

This recipe only makes enough dressing for 2 salads so if you want to make this for guests or as a main meal you might want to double the recipe.

Spinach Salad with Strawberries, Avocado & Chicken with Orange Poppy Seed Dressing

  • Prep Time: 5 minutes
  • Total Time: 5 minutes
  • Yield: 2 Salads

Ingredients

For the Salad:

  • 1 chicken breast, cooked and cubed
  • 3 cups baby spinach leaves
  • A few slices of red onion
  • 1/4 cup sliced almonds
  • 1/4 cup dried cranberries
  • 1/2 avocado, diced
  • 4-5 strawberries, halved or quartered
  • 1/4 cup feta cheese

For the Dressing:

  • 1/4 cup extra virgin olive oil
  • 1 teaspoon orange zest
  • 1/8 cup orange juice
  • 1 Tablespoon fresh lemon juice
  • 1 Tablespoon honey
  • 1 – 1 1/2 teaspoons Dijon mustard
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 Tablespoon poppy seeds

Instructions

  1. In a small bowl, combine the orange zest, orange juice, lemon juice, honey and mustard. Whisk together. Very slowly add the olive oil and then the poppy seeds. Refrigerate until ready to use. This salad dressing is best served cold.
  2. Add the salad ingredients in a large bowl and pour salad dressing on top.
  3. Serve immediately.

Notes

This salad dressing makes enough for 2 salads. For a larger group, double the dressing.
