Homemade Meatballs

meatballspicWhy is it that good meatball recipes are as hard to find as my other missing glove??  Like you, I’ve tried many … and I mean MANY meatball recipes.  Everything from the complicated to the easy.  They’ve come out burnt by the oil and not cooked on the inside to dry as wood and flavorless.

I’ve had 2 meatball recipes I’ve been toying with now for almost a year.  I think this one is my favorite.  And I say favorite because no one has complained.  There are certain recipes that if I get 3 out of 4 who like it, I keep it.  Even 2 out of 4 if I’m one of them – hee hee.  But meatballs are something different.  I have to have 4 for 4 or it’s not a winner.

These are a 4 for 4 in this house!  Try them, I think they’ll be a winner in your house too!!



Homemade Meatballs



  • 2 lbs. ground beef (preferably organic from your local butcher)
  • 1/4 cup finely chopped onion
  • 3 Tbsp ketchup
  • 1 egg, lightly beaten
  • 3 cloves minced garlic
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2/3 cup Parm cheese
  • 1/4 cup breadcrumbs (preferably homemade and whole wheat)
  • fresh parsley, chopped finely


  1. Preheat the oven to 375
  2. Put the ground beef in a large mixing bowl and add all other ingredients
  3. Mix loosely and lightly, do not mash with your hands
  4. Form into whatever size meatballs you prefer and put on a baking sheet lined with a Silpat. (Remember! The larger the meatball the longer the cooking time)
  5. Bake approximately 15-20 minutes or until meat is cooked through
