Boy I can’t tell you what I like best about this Middle Eastern Bowl from Eat Spin Run ~ the roasted eggplant or the roasted tomatoes.

There is nothing better than fresh, just picked from your garden summer cherry tomatoes.  That is … unless they are roasted!  With some garlic and oil and herbs.

Yes, please!

And my newest obsession…pine nuts.  If you’ve never tried them, you simply must!  They are uber expensive though so only buy the exact amount you will need.

With the addition of lentils and chickpeas, this meal is a powerhouse of nutrients!!

And the best thing of all, is you don’t need a lot of time, money or ingredients to make great food!  Angela proves that with this dish!
