Flourless Almond Butter Brownies


Ingredients

Scale
  • 1/4 cup plus 2 Tablespoons cocoa powder
  • 1 cup softened almond butter (by softened I mean put it in the micro for about 10 seconds to ‘loosen’ it up)
  • 2 Tablespoons organic whole milk
  • 1/2 cup pure maple syrup (not Aunt Jemima!)
  • 1/2 cup rolled oats (not 1 min or steel cut)
  • 1 1/2 tsp baking soda
  • 1/8 tsp salt

Optional:

  • 1 Tablespoon ground flax seeds
  • 1/2 cup crushed or chopped nuts
  • 2 or 3 Tablespoons of mini organic choc chips or carob chips

Instructions

  1. Preheat the oven to 325 F
  2. Line an 8-inch square pan with parchment paper going up the sides
  3. Start by processing the oats in a food processor until very fine
  4. Add the rest of the ingredients and pulse to combine (you can also stir the ingredients together in a bowl )
  5. Transfer the batter to the prepared pan and smooth out with a spatula
  6. If desired, press some chocolate chips into the top
  7. Bake for 15 minutes on the center rack – they may look underdone when you take them out, but this is okay
  8. Cool and cut into 12 squares
  9. Perfect for freezing
