Almond Flour Chocolate Donuts

Ingredients

Scale
  • ÂĽ Cup Cocoa powder
  • â…“ Cup Coconut flour
  • â…“ Cup Almond flour
  • â…“ Cup Almond milk
  • 2 tsp Baking powder
  • â…“ Cup Sugar
  • ÂĽ Cup Flaxseed 
  • Âľ Cup of water
  • ÂĽ Cup Coconut oil
  • 1 tsp Vanilla extract

For the Glaze:

  • ½ Cup Dark chocolate
  • 1 Tbsp. Coconut oil

Instructions

  1. Preheat an oven to 320° F.
  2. Mix the flaxseed with water and let it sit for 5 minutes. (This is going to bring moisture and a chewy consistency to our donuts).
  3. In a bowl, combine the cocoa powder, almond milk, baking powder, sugar, coconut oil and vanilla extract. 
  4. Add the coconut and almond flours and stir again.
  5. Spray a donut pan with baking spray.
  6. Using a spoon, fill the mold 3/4 full with the dough.  It will be quite sticky, so 2 spoons may be required. 
  7. Bake in the preheated oven for 15 minutes. They’ll seem drier but still soft to the touch.  Be careful not to overbake. 
  8. Combine the ingredients for the glaze and dip half the donut in.  Set aside on a cooling rack.
  9. Enjoy!

Notes

For a great variation drizzle the donuts with a salted caramel sauce made out of ½ peanut butter, 1 Tbsp coconut oil and ⅓ tsp salt.
