  1. Preheat the Oven: Set your oven to 250°F (120°C). Line two baking sheets with parchment paper or use a Silpat to prevent sticking.
  2. Whip the Egg Whites: In a medium bowl, whip the egg whites and water until frothy. This will help the sugar mixture adhere to the pecans.
  3. Mix the Sugar and Spices: In a separate large bowl, combine the sugar, salt, and ground cinnamon.
  4. Coat the Pecans: Add the pecans to the egg white mixture, stirring to coat them completely. Then, transfer the pecans to the sugar mixture and stir until all the pecans are evenly coated.
  5. Bake: Spread the pecans in a single layer on the prepared baking sheets. Bake for 1 hour, stirring every 15 minutes to ensure they bake evenly.
  6. Cool and Store: Allow the pecans to cool completely on the baking sheets before transferring them to an airtight container for storage.
