Description

Kids may not clamor for broccoli, but they’ll love this Cheesy Broccoli and Rice Casserole. Here’s how to make a creamy, cheesy, vegetarian side dish with hidden nutritional benefits.


Ingredients

Scale
  • 3 Cups Chicken broth
  • 1 ½ Cups White rice
  • 1 Cup Whole milk
  • 1 Tbsp. Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 Cup Sharp Cheddar cheese
  • 2 Cups Fresh Broccoli florets

Instructions

  1. In a medium sized pan, stir together the chicken broth, milk, olive oil, garlic powder, and onion powder over medium heat.  When it comes to a boil, add the rice. 
  2. Lower the heat to a simmer and place a lid on the pot.  Allow the rice to cook for 12-15 minutes.
  3. After 15 minutes, add the broccoli ON TOP, do not stir.  Cook another 5-8 minutes checking the broccoli is partially cooked.  Take it off the heat and stir.  
  4. Stir in the cheese until the cheese has melted.
  5. Transfer the mixture to a greased baking dish and bake at 350°F for 25 minutes, or until the edges are bubbly.
  6. Serve and enjoy!
