Christmas Crinkle Cookies

Ingredients

Scale
  • 1 ½ Cups Almond flour
  • 2 Tbsp. Coconut flour
  • Âľ Cup Sugar
  • 2 Eggs, room temperature
  • ½ Cup Cacao powder
  • ÂĽ Cup Unflavored Coconut oil
  • 1 ½ teaspoons Vanilla extract
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt  

For Rolling:

  • 3 Tablespoons Sugar 
  • 1 Cup Confectioners Sugar

Instructions

  1. Preheat the oven to 350° F and prepare 2-3 large baking trays with parchment paper.

  2. Mix the sugar with the melted and cooled coconut oil until well combined and creamy. Then add two eggs. Whisk until frothy. Add vanilla extract and combine.

  3. Mix the dry ingredients in a different bowl. (almond flour, coconut flour, cacao powder, salt and baking powder). Add the dry ingredients to the wet and stir until combined.

  4. Roll the batter into 20 1.5 inch balls. Place them in a small bowl with the 2 sugars and GENEROUSLY coat them.

  5. Place the balls on the prepared baking tray and lightly flatten them with the bottom of a glass or ramekin. Leave at least 1 inch in between cookies for them to expand whiles baking.

  6. Bake the cookies on the center rack for 10 minutes. The cookies will come out soft from the oven but will harden up as they cool.

  7. After baking, dust with extra powdered sugar if desired and enjoy!
