  • 2 Cups diced cooked chicken breast
  • 1/2 Cup sliced scallions (green onions)
  • 1/2 Cup halved red grapes
  • 1/4-1/2 Cup craisins (dried cranberries)
  • 1/2 Cup diced celery
  • 1/4 Cup finely chopped red onion
  • 1/2 Cup chopped pecans
  • 1/2 Cup plain Greek yogurt
  • 1/2 Cup Mayonnaise
  • 1 Tbsp. Dijon mustard
  • 1 Tbsp. Honey
  • Juice of 1/2 lemon
  • Salt and pepper to taste


Instructions

  1. In a large mixing bowl, combine the diced chicken, scallions, red grapes, craisins, celery, red onion, and pecans.
  2. In a separate small bowl, whisk together the Greek yogurt, mayonnaise, Dijon mustard, honey, lemon juice, salt, and pepper until smooth.
  3. Pour the dressing over the chicken mixture and toss gently until everything is evenly coated.
  4. Adjust seasoning to taste and chill in the refrigerator for at least 30 minutes before serving.

  5. Serve on a bed of mixed greens, in lettuce cups, or as a sandwich filling.
