Description

Penne pasta topped with a creamy blush vodka sauce – comfort food all day long!


Ingredients

Scale
  • 1 Small Onion, chopped finely
  • 3 Cloves Garlic, minced
  • 1 Tablespoon Tomato Paste
  • 1/4 teaspoon Red Pepper Flakes (optional)
  • 1/2 teaspoon Dried Oregano
  • 128 oz Can Crushed Tomatoes (preferably no salt added)
  • 1 Cup Vodka
  • 3/4 teaspoon Sea Salt
  • 1/4 teaspoon Black Pepper
  • 1 Cup Heavy Cream
  • 1/2 Box Whole Grain or Whole Wheat Penne Pasta
  • Freshly Grated Parmesan Cheese

Instructions

  1. Heat 1-2 tablespoons of oil in a large sauté pan over medium heat until warm.
  2. Add the diced onions and sauté for a few minutes until they become translucent.
  3. Stir in the garlic and sauté for another minute.
  4. Mix in the tomato paste, red pepper flakes, and dried oregano, and cook for an additional minute until the tomato paste deepens in color.
  5. Remove the pan from the heat and add the vodka. Allow it to simmer until it reduces by half.
  6. Stir in the crushed tomatoes, salt, and a pinch of freshly ground black pepper. Continue to simmer for 15-20 minutes, partially covered.
  7. Optionally, use an immersion blender to puree the sauce for a smoother texture.
  8. Add the heavy cream to the sauce and taste for seasoning. Adjust with seasonings as needed.
  9. Serve the sauce over cooked penne pasta noodles, garnished with chopped fresh basil and grated Parmesan cheese.
