Sugar Free Chocolate Mousse

Ingredients

Scale
  • 1 Cup Greek Yogurt
  • 1 Cup Cream cheese
  • 4 oz. Dark Chocolate
  • 2 Egg whites
  • 1 teaspoon Liquid Stevia (or sweetener of choice)
  • 1 teaspoon Vanilla extract

Optional:

  • Whipped cream for garnish 
  • Chocolate shavings for garnish

Instructions

  1. Beat the Greek yogurt with cream cheese together using a hand mixer in a large bowl.
  2. Add the sweetener and vanilla extract. Stir thoroughly to combine.
  3. Melt the dark chocolate in a microwave safe bowl in the microwave for 60 seconds at power 7, stir and melt again in 10 second increments until melted. Add it to the yogurt and stir until well combined.
  4. Beat the egg whites in another bowl with an electric mixer until soft peaks form. Gently, fold egg whites in the mousse bowl until evenly incorporated. Be gentle, so the mousse ends up fluffy and soft.
  5. Divide the mousse into four small ramekins or small glasses. Refrigerate for at least 2 hours.
  6. Optional:  Before serving, garnish with shaved chocolate, whipped cream or strawberries
