- 2 lbs. Ground Beef (80% lean, 20% fat)
- 1 Cup Breadcrumbs (Panko or regular)
- 1/2 Cup Whole milk
- 1 Large Egg, beaten
- 1/2 Cup Chopped onion
- 1/2 Cup Chopped bell pepper (red or green)
- 3 Cloves Garlic, minced
- 2 Tbsp. Worcestershire sauce
- 2 Tbsp. Ketchup
- 1 Tbsp. Dijon mustard
- 1 teaspoon Dried thyme
- 1 teaspoon Dried oregano
- 1 teaspoon Paprika
- 1/2 teaspoon Sea salt & Pepper
BBQ Glaze Ingredients:
- 1 Cup Ketchup
- 1/4 Cup Brown sugar
- 3 Tbsp. Apple cider vinegar
- 2 Tbsp. Molasses
- 1 Tbsp. Dijon mustard
- 1 teaspoon Smoked paprika
- 1/2 teaspoon Garlic powder
- 1/2 teaspoon Onion powder
- Salt and black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Grease a standard-sized bread loaf pan and set it aside.
- Combine the ground beef, breadcrumbs, milk, beaten egg, chopped onion, chopped bell pepper, minced garlic, Worcestershire sauce, ketchup, Dijon mustard, dried thyme, dried oregano, paprika, salt, and black pepper in a large mixing bowl. Mix thoroughly until all ingredients are well combined.
- Transfer the meat mixture to the greased bread loaf pan and press it down to form an even layer.
- Prepare the BBQ glaze by combining ketchup, brown sugar, apple cider vinegar, molasses, Dijon mustard, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper in another bowl. Stir until the glaze is smooth and well-mixed.
- Pour about half of the BBQ glaze over the meatloaf in the pan, spreading it evenly to cover the top.
- Place the bread loaf pan on a baking sheet to catch any drips during baking.
- Place the meatloaf in the preheated oven and bake for about 50-60 minutes or until the internal temperature reaches 160°F (71°C).
- Baste the meatloaf every 15-20 minutes with the remaining BBQ glaze to create a beautifully sticky and flavorful coating.Remove it from the oven and let it rest for a few minutes before slicing it.
- Serve it alongside your favorite mashed potatoes and green beans.
