Description

A fun, delicious and creative way to celebrate the red, white and blue of the 4th of July!

Ingredients

Scale
  • 1 Pkg Strawberries
  • 1 Pkg Blueberries
  • 2 Tablespoons Water, divided
  • 2 teaspoons Corn Starch, divided
  • 2 Tablespoons Butter, divided
  • 4 Tablespoons Sugar, divided
  • 1/2 teaspoon Salt, divided
  • Softened Vanilla Ice Cream

Instructions

  1. Prepare Strawberry Mixture:

    • Pour 1 tablespoon of water into a small bowl.
    • Add 1 teaspoon of cornstarch and stir until dissolved. Set aside.
    • Melt 1 tablespoon of butter in a medium saucepan over medium heat.
    • Add 1 package of strawberries, diced into 1/4-inch pieces, and cook for 2 minutes.
    • Add 2 tablespoons of sugar and 1/4 teaspoon of salt. Cook uncovered, stirring occasionally, until the liquid is reduced and thickened, about 12-15 minutes.
    • Stir the cornstarch mixture again and add it to the strawberry mixture. Bring to a boil and cook until thickened, about 2 minutes.
    • Allow the strawberry mixture to cool completely, then divide it in half.
  2. Prepare Blueberry Mixture:

    • Repeat the same process with the blueberries, using the remaining 1 tablespoon of water, 1 teaspoon of cornstarch, 1 tablespoon of butter, 2 tablespoons of sugar, and 1/4 teaspoon of salt. Do not divide the blueberry mixture. Set aside.
  3. Assemble Popsicles:

    • Divide the blueberry mixture evenly between 10 popsicle molds. Freeze until firm, about 3 hours.
    • Once frozen, remove the popsicles and add the first layer of strawberry mixture. Insert popsicle sticks into the molds, covering with foil to secure the sticks. Freeze until firm.
    • Add a layer of softened vanilla ice cream and freeze until firm.
    • Add another layer of strawberry mixture and freeze until firm.
    • Add the final layer of softened vanilla ice cream and freeze until ready to serve.
