Ingredients

Scale

Cinnamon Streusel:

  • 2 Tbsp Flour (I use unbleached from Bob Mills)
  • 2 Tbsp White Sugar
  • 0.5 oz butter
  • â…“ Cup Chopped Pecans
  • ½ teaspoon Cinnamon

For the Quick Bread:

  • 2 Eggs
  • ½ Cup Oil
  • ½ Cup Whole Milk
  • 2 teaspoons Vanilla extract
  • ½ Cup Brown Sugar
  • Âľ Cup White sugar
  • 2 ÂĽ cups all-purpose flour
  • 2 tsp cinnamon powder
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 large apple, or two small ones, peeled and diced (Granny Smith is most popular)
  • ½ tsp salt

Instructions

  1. Preheat the oven to 350°F and line a loaf pan with parchment paper and spray with cooking spray. Set aside.

  2. Prepare the crumble by mixing very cold cubed butter with the sugar in a bowl. Use a fork to combine. Then add the cinnamon and flour, and use your hands to achieve a crumbly texture. Finally, add the chopped pecans and combine. Set crumble aside.

  3. For the wet ingredients, whisk (or beat) the eggs with the oil, milk, and vanilla extract in a large bowl.  Add the white and brown sugars, and combine.

  4. For the dry ingredients, mix the flour, cinnamon powder, baking powder, baking soda, and salt in another bowl.

  5. Incorporate the dry ingredients with the wet ones.

  6. Fold in the diced apples and stir.

  7. Pour the batter into the prepared loaf pan, shake it to the sides, and onto the counter, so it bakes evenly.

  8. Sprinkle the prepared crumble on top and bake on the center rack in the oven for 60 minutes, or until an inserted toothpick comes out clean.
