Baked Chicken Nuggets

Ingredients

  • 2 Boneless Skinless Chicken breasts (filleted in half and flattened with a mallet, cut in 1″ chunks)
  • 1 Cup Breadcrumbs (Italian or Panko)
  • 1/2 Cup Freshly grated Parmesan cheese
  • 1/2 teaspoon EACH dried basil, thyme, garlic, onion powders
  • Salt and pepper to taste
  • 4 Tbsp. Butter, melted

Instructions

  1. Preheat the oven to 400° F.  Line a baking sheet with parchment paper and set aside.
  2. Cut chicken breasts into bite size pieces or strips.
  3. In a bowl, mix together the breadcrumbs, Parmesan cheese and spices
  4. Melt the butter in a sauté pan over low/medium heat.  Once melted, remove from the heat and place next to the chicken and breadcrumbs.
  5. Dip the chicken pieces first into the butter and then the breadcrumbs.
  6. Place the chicken on the baking sheet and bake for 15 minutes. Flip the chicken oven using tongs and cook another 5 minutes or until cooked through.
