Ingredients

Scale

Bang Bang Sauce:

  • ½ Cup Mayonnaise
  • ¼ Cup Sweet Chili sauce
  • 1-2 teaspoons Sriracha

Chicken

  • 1 lb. Skinless Boneless Chicken breast, chopped into bite-size pieces
  • ½ Cup Buttermilk
  • ¼ Cup + 2 Tbsp. Organic Cornstarch
  • ¼ Cup + 2 Tbsp Flour
  • 1 Cup Panko Breadcrumbs
  • ½ teaspoon EACH: garlic powder, paprika, onion powder, salt
  • Oil for frying

Instructions

  1. Cut the chicken into bite sized pieces and place in a large bowl.
  2. Add the buttermilk to the chicken and allow to soak while continuing to step 3.
  3. Mix the cornstarch, flour, panko, garlic powder, onion powder, paprika, and salt in a small bowl.
  4. Place each chicken piece in the breading mixture and toss to coat.
  5. Heat oil in a skillet, about ½ inch deep.
  6. Remove the chicken from the breadcrumbs with a large slotted spoon or a pair and tongs and gently place into the skillet and fry on both sides until crispy, about 2 minutes per side. Use paper towels to absorb excess oil.
  7. To make the Bang Bang sauce, simply whisk mayonnaise, sweet chili sauce, and sriracha.
  8. Serve warm with the sauce on top. Add fresh green onions as a garnish.
