Chicken Salad with Greek Yogurt, Apples and Pecans


  • 1 chicken breast, cooked, cooled and diced or shredded
  • 1/2 cup celery, diced (about 2 stalks)
  • 1/2 cup apple, diced
  • 1/2 cup grapes, quartered or halved depending on size
  • 1/4 cup red onion, diced
  • 1/2 cup pecans, chopped
  • 1/4 cup dried cranberries

For the Dressing:

  • 1/2 cup Greek yogurt
  • 1 Tablespoon fresh lemon juice
  • 3 Tablespoons mayo
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper


  1. In a large bowl combine the chicken, celery, apple, grapes, onion, pecans and cranberries.
  2. In a smaller bowl combine the ingredients to make the dressing.
  3. Pour the desired amount of dressing over the chicken and stir to combine.
  4. Taste for seasoning and add more salt and pepper if necessary.
  5. Refrigerate leftovers in a sealed container for up to 3 days.
