Cilantro Lime Brown Rice

A spinoff of the cilantro lime rice from Chipotle only using healthy organic brown rice instead of white



  • 1 1/2 cups organic brown rice
  • 2 1/3 cups water
  • ΒΌ teaspoons salt
  • 1 bay leaf
  • 1 Tablespoon organic butter
  • 2 Tablespoons finely chopped cilantro
  • 2 Tablespoons fresh lime juice
  • 1 Tablespoon fresh lemon juice


  1. Preheat the oven to 375
  2. Put the rice, salt, bay leaf and butter into a square baking dish. Microwave the water so it’s hot but not boiling and pour over the rice. Cover VERY tightly with foil, even double it if you have to so no steam escapes
  3. Put the pan on the middle baking rack and bake for one hour without disturbing
  4. Remove the pan and carefully remove the foil (it will be steaming hot) fluff with a fork and cover with a clean towel for 5 minutes
  5. Meanwhile, chop up your cilantro and juice the lemon and lime
  6. Remove bay leaf and add the rest of the ingredients
