Description
A spinoff of the cilantro lime rice from Chipotle using brown rice instead of white.
Ingredients

- 1 1/2 Cups Brown rice
- 2 1/3 Wups water
- ÂĽ teaspoon Sea Salt
- 1 Bay Leaf
- 1 Tablespoon Butter
- 2 Tablespoons fresh Cilantro, finely chopped
- 2 Tablespoons Fresh Lime juice
- 1 Tablespoon Fresh Lemon juice
Instructions
- Preheat the oven to 375° F.
- Put the rice, salt, bay leaf and butter into a square baking dish. Microwave the water so it’s hot but not boiling and pour carefully pour it over the rice. Cover the dish VERY tightly with foil, even double it if you have to so no steam escapes.
- Put the pan on the middle baking rack and bake for one hour without disturbing.
- Remove the pan and carefully remove the foil (it will be steaming hot) fluff the rice with a fork and cover it with a clean towel for 5 minutes to allow more steam to escape.
- Meanwhile, chop up the cilantro and juice the lemon and lime.
- Discard the bay leaf and stir in the chopped cilantro and citrus.
