- 1 lb. Large Shrimp, peeled and deveined
- 1 Cup Buttermilk
- 1 Cup All-Purpose Flour
- 1 Cup Cornstarch
- 1 tsp Paprika
- 1 tsp Garlic Powder
- 1/2 tsp Cayenne Pepper (adjust to taste)
- Salt and Pepper to tas
- Vegetable Oil, for frying
For the Sauce:
- 1/2 Cup Mayonnaise
- 1/4 Cup Sweet Chili Sauce
- 2 Tbsp Sriracha (adjust to taste)
- 1 Tbsp Honey
- 1 Tbsp Rice Vinegar

- Prepare the Shrimp:
- In a bowl, marinate the shrimp in buttermilk for at no more than 30 minutes. This helps to tenderize the shrimp and allows the coating to stick better.
- Make the Coating:
- In a separate bowl, mix the flour, cornstarch, paprika, garlic powder, cayenne pepper, salt, and pepper.
- Coat the Shrimp:
- Remove shrimp from the buttermilk, letting excess drip off. Dredge the shrimp in the flour mixture, ensuring they are fully coated.
- Fry the Shrimp:
- Heat oil in a small deep skillet to 350°F (175°C). Fry the shrimp in batches until golden brown and crispy, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.
- Prepare the Sauce:
- In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until well combined.
- Toss the Shrimp:
- Place the crispy shrimp in a large bowl. Pour the sauce over the shrimp and toss gently until the shrimp are evenly coated.
