Ingredients

  • 1 lb. Large Shrimp, peeled and deveined
  • 1 Cup Buttermilk
  • 1 Cup All-Purpose Flour
  • 1 Cup Cornstarch
  • 1 tsp Paprika
  • 1 tsp Garlic Powder
  • 1/2 tsp Cayenne Pepper (adjust to taste)
  • Salt and Pepper to tas
  • Vegetable Oil, for frying

For the Sauce:

  • 1/2 Cup Mayonnaise
  • 1/4 Cup Sweet Chili Sauce
  • 2 Tbsp Sriracha (adjust to taste)
  • 1 Tbsp Honey
  • 1 Tbsp Rice Vinegar

Instructions

  • Prepare the Shrimp:
    • In a bowl, marinate the shrimp in buttermilk for at no more than 30 minutes. This helps to tenderize the shrimp and allows the coating to stick better.
  • Make the Coating:
    • In a separate bowl, mix the flour, cornstarch, paprika, garlic powder, cayenne pepper, salt, and pepper.
  • Coat the Shrimp:
    • Remove shrimp from the buttermilk, letting excess drip off. Dredge the shrimp in the flour mixture, ensuring they are fully coated.
  • Fry the Shrimp:
    • Heat oil in a small deep skillet to 350°F (175°C). Fry the shrimp in batches until golden brown and crispy, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.
  • Prepare the Sauce:
    • In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until well combined.
  • Toss the Shrimp:
    • Place the crispy shrimp in a large bowl. Pour the sauce over the shrimp and toss gently until the shrimp are evenly coated.
