Forget the frozen, hard, bland and boring waffles and make your own for a fraction of the price ~ and they freeze just as well!
Ingredients

- 1 ½ Cups Unbleached Flour
- 1 Tbsp. Sugar
- 1 Tbsp. Baking powder
- ½ teaspoon Sea salt
- 2-3 Medium sized RIPE bananas, mashed
- 1 Cup Milk (dairy or non-dairy)
- 2 Large Eggs
- ¼ Cup Butter, melted
- 1 teaspoon Vanilla extract
- Optional: ½ teaspoon ground cinnamon
EQUIPMENT NEEDED:
- Kitchen Gadgets (spatula, mixing bowl, measuring cups, whisk)
- Waffle iron
Instructions
- Preheat your waffle iron according to the manufacturer’s instructions.
- Mix the Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt (and cinnamon if using).
- Prepare the Wet Ingredients: In a separate bowl, mash the ripe bananas until smooth. Add the milk, eggs, melted butter, and vanilla extract to the mashed bananas. Whisk until well combined.
- Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
- Cook the Waffles: Lightly grease the waffle iron with cooking spray or a little melted butter. Pour the batter onto the waffle iron, spreading it out evenly. Cook according to your waffle iron’s instructions, usually about 3-5 minutes, until the waffles are golden brown and crisp.
- Serve: Serve the waffles warm with your favorite toppings like maple syrup, sliced bananas, chopped nuts or whipped cream.
