Description

Forget the frozen, hard, bland and boring waffles and make your own for a fraction of the price ~ and they freeze just as well!


Ingredients

Scale
  • 1 ½ Cups Unbleached Flour
  • 1 Tbsp. Sugar
  • 1 Tbsp. Baking powder
  • ½ teaspoon Sea salt
  • 2-3 Medium sized RIPE bananas, mashed
  • 1 Cup Milk (dairy or non-dairy)
  • 2 Large Eggs
  • ¼ Cup Butter, melted
  • 1 teaspoon Vanilla extract
  • Optional: ½ teaspoon ground cinnamon

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. Mix the Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt (and cinnamon if using).
  3. Prepare the Wet Ingredients: In a separate bowl, mash the ripe bananas until smooth.  Add the milk, eggs, melted butter, and vanilla extract to the mashed bananas. Whisk until well combined.
  4. Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  5. Cook the Waffles: Lightly grease the waffle iron with cooking spray or a little melted butter.  Pour the batter onto the waffle iron, spreading it out evenly. Cook according to your waffle iron’s instructions, usually about 3-5 minutes, until the waffles are golden brown and crisp.

  6. Serve: Serve the waffles warm with your favorite toppings like maple syrup, sliced bananas, chopped nuts or whipped cream.
