Did you grow up on waffles? I did, but not the homemade kind. The Eggo kind. I had to google where the name came from. Did you know it means “Egg and Go” ~ like eggs on the go. Kind of odd, right? I mean, I never really connected eggs with those crispy, frozen squares, but hey, that’s marketing for you!
So, if you’re like me and those pre-made waffles were a staple, let’s make some homemade waffles. Forget the store-bought ones, these freeze just as well!

What I love about this recipe is how straightforward it is. With just a few basic ingredients—flour, baking powder, milk, and those ripe bananas—you get a breakfast that’s both delicious, easy to prepare. The bananas bring a natural sweetness that means you don’t need to add any extra sugar, making these waffles a bit healthier and a lot more flavorful.
WHY DO I LOVE THESE WAFFLES SO MUCH?
- The bananas are sweet already so less sugar is added,
- They are super easy to make,
- You can batch make them,
- They can be frozen (just like Eggo) for months!
- They cost pennies to make compared to $4.99 for a box of 10!

TIPS FOR THE PERFECT WAFFLE:
- Preheat the Waffle Iron: Ensure your waffle iron is fully preheated before adding the batter. This helps the waffles cook evenly and get that crisp texture. Many waffle irons have an indicator light to let you know when they’re ready.
- Use the Right Amount of Batter: For standard waffle irons, scoop about ½ to ¾ cup of batter per waffle. For Belgian waffle irons, use ¾ to 1 cup of batter. This ensures the batter spreads out properly without overflowing.
- Don’t Overmix the Batter: Mix the ingredients until just combined. Overmixing can lead to tough waffles due to the development of gluten. A few lumps are okay!
- Grease the Waffle Iron: Even if your waffle iron is non-stick, lightly greasing it with cooking spray or a brush of oil helps prevent sticking and makes cleaning easier.
- Serve Immediately or Keep Warm: Waffles are best enjoyed fresh. If you need to keep them warm, place them on a wire rack in a low oven (about 200°F) to prevent them from becoming soggy. Avoid stacking them as they cool.

Banana Waffles

Description
Forget the frozen, hard, bland and boring waffles and make your own for a fraction of the price ~ and they freeze just as well!
Ingredients
- 1 ½ Cups Unbleached Flour
- 1 Tbsp. Sugar
- 1 Tbsp. Baking powder
- ½ teaspoon Sea salt
- 2–3 Medium sized RIPE bananas, mashed
- 1 Cup Milk (dairy or non-dairy)
- 2 Large Eggs
- ÂĽ Cup Butter, melted
- 1 teaspoon Vanilla extract
- Optional: ½ teaspoon ground cinnamon
EQUIPMENT NEEDED:
- Kitchen Gadgets (spatula, mixing bowl, measuring cups, whisk)
- Waffle iron
Instructions
- Preheat your waffle iron according to the manufacturer’s instructions.
- Mix the Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt (and cinnamon if using).
- Prepare the Wet Ingredients: In a separate bowl, mash the ripe bananas until smooth.  Add the milk, eggs, melted butter, and vanilla extract to the mashed bananas. Whisk until well combined.
- Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
- Cook the Waffles: Lightly grease the waffle iron with cooking spray or a little melted butter. Pour the batter onto the waffle iron, spreading it out evenly. Cook according to your waffle iron’s instructions, usually about 3-5 minutes, until the waffles are golden brown and crisp.
- Serve: Serve the waffles warm with your favorite toppings like maple syrup, sliced bananas, chopped nuts or whipped cream.
