Ingredients

- 1 1/2 cups old fashioned 5 min oats
- 1/2 cup natural peanut butter (just peanuts, not Skippy)
- 1/2 cup shredded coconut
- 1/4 cup nuts, chopped (I used walnuts)
- 1/4 cup ground flax seed (you can buy this in the baking aisle – I use Bob’s)
- 1/4 cup mini chocolate chips or vegan cocoa nibs
- 1/3 cup organic honey
- 1 teaspoon vanilla extract
Instructions
- Line a baking sheet with parchment paper and set aside.
- Put all the ingredients in a large bowl and stir with a big wooden spoon, or better yet, just get in there with your hands.
- Form into 1 or 2″ balls and place on the baking sheet.
- Refrigerate until firm.
- Store in a an airtight container in the fridge.
