Roasted Garlic Shrimp (Cocktail)

Ingredients

  • 1 Pound Shrimp, peeled and deveined leaving tail on
  • 2 Tablespoons Olive oil
  • 2 Tbsp. Lemon juice
  • 2 teaspoons Garlic, minced (2 garlic cloves)
  • ½ teaspoon Dried Oregano
  • ½ teaspoon Dried Thyme
  • 1/4 teaspoon Old Bay Seasoning
  • Sea Salt and Black pepper to taste

Instructions

FOR THE SHRIMP:

  1. Preheat the oven to 400° F.
  2. Peel and devein the shrimp leaving the tails on.
  3. Whisk the oil and spices to a medium bowl and add the shrimp.  Toss to coat.
  4. Line a large baking sheet with foil, parchment or a Silpat.  Place the shrimp in a single layer.
  5. Roast for 8 – 10 min or until the shrimp turn pink.  Place in the refrigerator until completely chilled.

FOR THE COCKTAIL SAUCE:

  • 1/2 Cup Ketchup
  • 3 Tablespoons Horseradish
  • 1 teaspoon Freshly squeezed lemon juice
  • 1/2 teaspoon Worcestershire sauce
  • 1 teaspoon Brown sugar (optional)

Mix all ingredients together in a small bowl and refrigerate until ready to use.
