Roasted Tomato and Goat Cheese Crostini

Description

An easy no fail appetizer that will wow your guests of thinly sliced toasted bread, goat cheese, roasted tomatoes, shallots and garlic drizzled with balsamic glaze or honey on top!


Ingredients

Scale
  • 1 Pint grape tomatoes (cut in half or quarters if they are on the large side)
  • 12 shallots, minced
  • 23 Cloves of garlic, minced
  • 23 Tbsp. Extra virgin olive oil
  • 1/21 teaspoon Sea salt
  • 1/2 teaspoon Black pepper
  • 1 log of Goat cheese
  • Baguette bread, sliced and lightly toasted
  • 12 Tbsp. Fresh Basil, chopped
  • (Optional) Balsamic glaze or honey

Instructions

  1. Preheat the oven to 350° F.
  2. Cut the grape tomatoes in half or quarters, depending on their size.
  3. Mince the shallots and garlic.
  4. In a bowl, combine the tomatoes, minced shallots, minced garlic, extra virgin olive oil, sea salt, and freshly ground pepper. Ensure all ingredients are evenly coated with olive oil.
  5. Spread the tomato mixture on a rimmed baking sheet lined with a Silpat or parchment paper.
  6. Roast in the preheated oven for about 30 minutes, turning the tomatoes halfway through the cooking time for even roasting.
  7. Once the tomatoes are softened and the shallots slightly caramelized, remove them from the oven.
  8. Slice the baguette bread into thin slices and place them on a baking sheet.
  9. Lightly toast the bread slices in the oven for about 5-7 minutes, or until they are crispy and golden brown.
  10. Smear some goat cheese on the toasted bread, top with a spoonful of the roasted tomato mixture and top with strips of fresh basil.
