Spaghetti Aglio e olio

  • 1 lb spaghetti
  • 1/2 Cup Quality Olive Oil
  • 4 Cloves Organic Garlic, sliced thin
  • Red Pepper Flakes
  • Parsley to Garnish
  • Freshly grated Parmesan cheese


  1. Begin by preparing the pasta by bringing a large pot of salted water to a boil
  2. Meanwhile, in a large skillet, add 5-6 tablespoons olive oil, let it warm and then and garlic. Add pinch of red pepper flakes, if using
  3. Cook over medium heat until garlic is very lightly golden, about 5 minutes
  4. When the pasta is done, transfer it to the skillet along with 1/2 cup pasta water
  5. Increase heat to high, and cook, stirring and tossing rapidly, until a creamy, emulsified sauce forms and coats the noodles
  6. Remove from heat, add remaining olive oil, and stir well to combine
  7. Top with freshly chopped parsley and cheese (if using)
