Stuffed Buffalo Chicken Meatballs

Description

For those who don’t prefer the taste of blue cheese, try these buffalo chicken meatballs stuffed with mozzarella instead.

FOR THE MEATBALLS:

  • 1 Lb. Ground Chicken
  • 1 Large Egg
  • 1/2 Cup Panko Breadcrumbs
  • 1 teaspoon garlic powder, onion powder and paprika
  • Salt and pepper to taste
  • 3 Tablespoons Buffalo wing sauce
  • 1/2 Cup Mozzarella, shredded
  • 4 Tablespoons butter, cut in 1 Tbsp.

FOR THE SAUCE:

  • 3/4 Cup Buffalo Sauce – Get the recipe here

Instructions

  1. In a large bowl, combine the chicken, egg, spices, breadcrumbs and 3 Tbsp buffalo wing sauce.  Combine with your hands until thoroughly mixed.
  2. Scoop out 1 Tablespoon and flatten in your hand – I found using slightly wet hands (or rubbed in a little olive oil) helps keep the chicken from sticking.  Set the flattened meatball on a baking sheet and continue until all the chicken is gone. 
  3. Take a flattened meatball in the palm of your hand and place some mozzarella cheese on top.  Add another flattened meatball on top and being to roll into a ball.  Do this with the remaining meatballs until done. 
  4. Place the meatballs into the slow cooker and pour buffalo sauce on top and place the butter pieces on top. 
  5. Cover and cook on low 4 hours.
  6. Serve with a side of Ranch dressing or Blue Cheese, carrots and celery.
