For those who don’t prefer the taste of blue cheese, try these buffalo chicken meatballs stuffed with mozzarella instead.Â

FOR THE MEATBALLS:
- 1 Lb. Ground Chicken
- 1 Large Egg
- 1/2 Cup Panko Breadcrumbs
- 1 teaspoon garlic powder, onion powder and paprika
- Salt and pepper to taste
- 3 Tablespoons Buffalo wing sauce
- 1/2 Cup Mozzarella, shredded
- 4 Tablespoons butter, cut in 1 Tbsp.
FOR THE SAUCE:
- 3/4 Cup Buffalo Sauce – Get the recipe here
Instructions
- In a large bowl, combine the chicken, egg, spices, breadcrumbs and 3 Tbsp buffalo wing sauce. Combine with your hands until thoroughly mixed.
- Scoop out 1 Tablespoon and flatten in your hand – I found using slightly wet hands (or rubbed in a little olive oil) helps keep the chicken from sticking. Set the flattened meatball on a baking sheet and continue until all the chicken is gone.Â
- Take a flattened meatball in the palm of your hand and place some mozzarella cheese on top. Add another flattened meatball on top and being to roll into a ball. Do this with the remaining meatballs until done.Â
- Place the meatballs into the slow cooker and pour buffalo sauce on top and place the butter pieces on top.Â
- Cover and cook on low 4 hours.
- Serve with a side of Ranch dressing or Blue Cheese, carrots and celery.Â
