Description

A classic cranberry walnut quick bread made with fresh cranberries, walnuts and a touch of orange.


Ingredients

Scale

Dry Ingredients

  • 2 cups unbleached all-purpose flour
  • 1 cup granulated sugar
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt

Wet Ingredients

  • 1 large egg
  • ¾ cup orange juice
  • Zest of 1 orange
  • 2 tablespoons unsalted butter, melted

Other Ingredients

  • 1 cup fresh cranberries, halved or roughly chopped
  • ½ cup walnuts, chopped


Instructions

  1. Adjust an oven rack to the middle position and preheat the oven to 350°F. Grease a loaf pan with nonstick cooking spray and/or line it with parchment paper.
  2. Sift the flour, sugar, baking powder, baking soda and salt together in a large mixing bowl.
  3. In a separate bowl, beat the egg. Stir in the orange juice, orange zest and melted butter.
  4. Slowly add the wet ingredients to the dry ingredients and gently mix with a sturdy rubber spatula or wooden spoon just until combined. Do not overmix.
  5. Fold in the cranberries and chopped walnuts.
  6. Transfer the batter to the prepared loaf pan and smooth the top.
  7. Bake for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool before removing it from the pan and slicing. Serve as-is or with butter or cream cheese.
