Healthy, gluten-free, and tasty… that’s what you’ll get with this baked apple oatmeal recipe. It’s packed with ripe Fall apples, oats, nuts, sugar and butter and baked until its tender, warm and savory.

Upon first glace, you may wonder why not cook the oatmeal on the stove and add the extra ingredients. But let me tell you, there’s something sweet and savory about baking this like a casserole.
The way the ingredients bake together give it the consistency of bread pudding, which is much better for taste and flavor. There are also different variations you can do with this baked apple oatmeal recipe.
For starters, you can change the types of nuts to use. Pecans are often a southern favorite and they develop a rich flavor with a crunchy texture when baked. If you want to swap the pecans, try substituting them for walnuts. This type of nut offers a buttery and mild flavor when baked.
Other nuts to consider trying are hazelnuts and almonds. Each one will add its own flavor, crunch, and aroma to the dish.
What You Need to Make Baked Apple Oatmeal
Again, I doubt you have to run to the store to get anything, but if so, it’ll be easy to find. All you need are the following ingredients:
- Rolled oats
- Pecans (chopped)
- Baking powder (Hains no salt)
- Cinnamon
- Sea Salt
- Unsweetened Almond milk
- Apple sauce (or maple syrup)
- Vanilla extract
- Flaxseed
- Butter (melted)
- Sweet Apples
- Brown Sugar
How to Make It
Anytime you’re doing any baking, get into the habit of preheating your oven first. For this recipe, set your over to 350°F. While it’s warming up continue with the remaining steps.
Step 1
Grease an 8’’ x 8’’ glass or metal baking dish and set it aside. Although most oils are gluten-free, be sure to use one that you know is gluten-free for sure. You’re safest bet would be olive oil.
Step 2
In a large bowl, mix the almond milk with the flaxseed meal and let it sit for 5 minutes. You can either wait to do the next step since it will be combined with this mixture or go ahead and mix step three in a separate small bowl.
Step 3
Depending on your preference, you can mix this separately or add directly to the flax meal. Add the baking powder, cinnamon, salt, apple sauce, vanilla extract, butter and brown sugar. Then stir everything together until combined.
Step 4
Add the rolled oats and pecans. Give it another good stir to combine.
Step 5
Chop the apples into small bite-size pieces and add them to the mixture. Stir well to combine.

Step 6
Put the mix into the greased tray and bake for 35 to 40 minutes or until oats are well set and golden brown around the edges.
Be sure to let it cool a bit before serving.

What to Serve with Baked Apple Oatmeal
Of course you can’t go wrong with adding a few drizzles of maple syrup and more cinnamon on top. However, you can also pair this sweet dish with so much for.
Since this is typically enjoyed for breakfast or brunch, you can always add a few slices of apples on the side along with a handful of nuts.
If you want to add an extra bit of sweetness and make this more of an after dinner dessert, add a dollop of ice cream or whipped cream (keeping in mind gluten free options if that is your preference).
