  1. Heat the olive oil and butter over medium heat. Add the garlic and cook for about 1 minute.
  2. Add the chicken broth and bring it to a boil.
  3. Add the uncooked angel hair pasta directly to the broth and cook until al dente.
  4. Remove the pan from the heat and gradually stir in the Parmesan cheese until melted.
  5. Stir in the half-and-half and parsley.

Tips for the Best Garlic Parmesan Noodles

Use freshly grated Parmesan.
Freshly grated cheese melts more smoothly than packaged pre-shredded Parmesan.

Description

  • 56 cloves fresh garlic, minced
  • 3 tablespoons butter
  • 3 cups low-sodium chicken broth or chicken stock
  • 8 ounces angel hair pasta, uncooked
  • 1 cup freshly grated Parmesan cheese
  • ¾ cup half-and-half, or whole milk
  • Salt, to taste
  • ¼ teaspoon black pepper
  • 12 tablespoons fresh parsley, finely chopped

Instructions

  1. In a large saucepan, heat the olive oil and butter over medium heat. Add the garlic and cook for about 1 minute, stirring frequently.
  2. Add the chicken broth and bring to a boil over high heat.
  3. Add the uncooked angel hair pasta directly to the broth. Cook until al dente, stirring occasionally. Do not drain.
  4. Remove the pan from the heat and let it sit for about 1 minute.
  5. Gradually stir in the Parmesan cheese until melted and smooth.
  6. Stir in the half-and-half and parsley.
  7. Taste and season with salt and black pepper as needed.
  8. Let the noodles stand for about 5 minutes before serving. The sauce will continue to thicken as the pasta absorbs the liquid. Add a splash of milk if you prefer a thinner consistency.

  5. These turned out great. I used a 18-oz container of spiral noodles and doubled the recipe. Next time I’ll add a touch more stock because the noodles had to cook extra long, which decreased the liquid quite a bit. Great flavor, family loved it.

  14. These noodles are TO DIE FOR! My family LOVES them! I have made them 3 or 4 times now. I only wish the recipe was for 12 ounces of noodles. I have never even seen an 8 oz package of noodles, so I have to guess. When I guess correctly, the noodles are FABULOUS. When I don't, they are soupy and not so great. I think I am going to rewrite my recipe for 12 ounces of noodles. If you have had a soupy experience with these, it's probably because of not enough noodles. Try again. It's worth it. Super yummy!
