Have you ever tried to make roasted vegetables, only to end up with a mushy, flavorless mess? Fear not, because we’ve got the solution! I’ll show you how to make the most delicious Butter and Honey Roasted Carrots in just 4 simple steps.

Carrots roasted with a rich and creamy buttery glaze, combined with the perfect amount of sweetness, make for a perfect side dish. Not to mention they are a great way to get kids to eat their veggies. If you’re new to making roasted vegetables, don’t worry, we’ll show you how to get perfectly cooked carrots every time!
Step 1: Preheat Your Oven and Prepare the Carrots
To begin making these butter and honey roasted carrots, the first step is to preheat your oven to 400° F. While the oven is preheating, rinse and peel the carrots, and then I like to cut them into big chunks on an angle. Make sure they are the same size. This will ensure that the carrots cook evenly and become tender enough to melt in your mouth.
Step 2: Melt the Butter
Now that the carrots are prepped, it’s time to move on to step two of this recipe. Start by placing the butter in a small saucepan over low heat. This will allow it to slowly melt without burning or browning. Once the butter is fully melted, add the brown sugar, chicken stock and parsley. Stir until the sugar is fully dissolved.
Step 3: Mix the Butter and Honey
With the butter melted and ready to go, it’s time to add the sweetness to the mix. Take the saucepan off the heat and add the honey, stirring until the two are fully blended. The resulting mixture should have a smooth and consistent texture, with no lumps or clumps of either ingredient.
Step 4: Roast the Carrots
Now that the honey and butter are mixed to perfection, it’s time to move on to the next step: roasting the carrots. I like to use a Dutch oven for this recipe because they retain their heat so well and the carrots get a nice caramelization on them.
Place the carrots in the Dutch oven (or cast iron skillet) and pour the melted butter all over them. Toss to coat. Place them on the middle rack of the oven and roast the carrots for approximately 25-30 minutes, or until they are golden brown and tender.
Keep an eye on them towards the end of the cooking time to make sure they don’t burn. Once they are done, remove them from the oven and transfer them to a serving dish.
